30 Minute Dinner - Black Bean Tortilla Pie

You'll just have to trust me on this one - it's GOOD.  Sounds weird, but oh so good.  It's one that I've adapted from this cookbook:
Everyday Food: Great Food Fast

I like that it's meatless, quick, and nutritious.  A great recipe to add to your repertoire of 30 minute dinners.  Let's whip it up, shall we?

Black Bean Tortilla Pie

some ingredients
and grated cheese - grate your own - you'll save so much money and it's better for you


I made a big pot of corn on the cob so I could do 

this 

and then this goes in the freezer

 saute onions (from the freezer) in a bit of veggie oil

 add the beans and beer - trust me on the beer

boil black beans and beer down until they look like this

then add a can of fire roasted tomatoes and the cooked corn - try them sometime - they've revolutionized my cooking

 layer ingredients in a springform pan -  start with a tortilla - I use 8 inch, the recipe calls for 10 inch
then the bean mixture and cheese

bake until heated through and it looks like this - slice in wedges and serve.
(leftovers are even better - especially when there's only enough for a mommy lunch)

This is the original recipe (no tomatoes, jalapenos) and here's my adaptation.  GO here and grab one.
