Blueberries!


In the kitchen today, I'm going to share a couple blueberry tips with you.  We went to a local farm for blueberries last week - they were delicious so I bought a little extra for freezing.  I never wash the berries before freezing - I just toss them in a freezer bag and put them straight in the freezer.  Blueberries hold up so much better if you wait to wash them when you need them.  It's great to be able to come home from a farm and have something that requires no preparation and can be tossed in the freezer right away - I love that!


Wash the blueberries before using - whether they are fresh or frozen - and let's make the best blueberry pie EVER!


I'm a bit of a pie pro - I've made more pies than I can count - tried just about every type of crust and filling out there and am the one to bring the pies for family functions.  I found a new blueberry pie recipe and as far as I'm concerned, I'll never make another one.  It's that good!  

First, here are a couple pie crust tips....

I use my KitchenAid mixer with the paddle attachment
 

I use ICE water instead of cold water


Mix up the dough until it just starts to come together (over mixing makes for a tough and not tender crust) and then roll it out.




Look at this Blueberry Crumble Pie - it's the best of both worlds - a perfect pie crust on the bottom and a crumble-y topping like a fruit crisp.  The filling also has brown sugar in it which really helps keep the filling from getting runny.

  4. Interesting! I've always washed my blueberries before freezing - love the idea of NOT doing that :) I'm going picking tomorrow, so I'll have to use your advice - makes me even more excited for picking! Can't wait to try that pie, either.
