SHORT CUT 1 - Summer Chicken Salad


Need a great short cut for the summer?  Have a chicken salad recipe in your back pocket.  It can be whipped up at a moment's notice with endless variations AND it can be made ahead.  If you don't already have a favorite recipe, try mine - it's delicious.  

dressing ingredients - salt and pepper to taste, seasonings to taste - about 1 teaspoon total, one half cup of mayonnaise, 1 teaspoon olive oil, juice from one lemon

4 cups cubed rotisserie chicken


mix dressing with chicken - add extra ingredients to taste - dried cranberries or raisins, nuts, pineapple, apples, etc.

put chicken salad on a croissant, bread, a melon in half....

    Can you believe it...I still haven't tried a rotisserie chicken. But I'm putting it on my To-Do List for this week!
